The Carillon family has been an important wine presence in Puligny-Montrachet since the 1700s. Today’s Domaine François Carillon also resides in Puligny-Montrachet, and is focused on the production of Chardonnay-driven white wines. Founded in 2010, the domaine came to be after François and his brother Jacques decided to divide their father’s estate, Domaine Louis Carillon, which had earned a reputation for being one of Burgundy’s finest. Of the 16-acre domaine, nearly 75% is in Puligny-Montrachet, including premier cru vineyards in Les Champs Gains and Les Folatières as well as Chevalier-Montrachet; other holdings are based in Chassagne-Montrachet and Saint-Aubin. Unlike most producers who use underground cellar systems, Domaine François Carillon keeps its cellar system above ground in response to the area’s high water table. The technique hasn’t seemed to have a negative impact; on the contrary, the domaine’s wines are known for their personality, elegance, and forward fruit flavors.
