Sant Aubin is one of Burgundy’s most prolific vineyards, and one of its highest quality grand crus. In fact, early 75% of its plots hold the esteemed status of grand cru. Previously a Pinot Noir-dominant vineyard, Saint Aubin has recently responded to the growing demand for Chardonnay wines. Joining its neighbors, Puligny-Montrachet and Chassagne-Montrachet, Saint Aubin has reversed its direction by now dedicated its efforts towards Chardonnay in an almost 3 to 1 ratio against Pinot Noir.
